                      • 1 small head romaine lettuce, torn into bite-size pieces

                      • 1 1/2 avocados, chopped
                      • 1/2 small cucumber, finely diced
                      • 1 small tomato, chopped
                      • 1/2 red onion, thinly sliced
                      • 1/2 cup fresh cilantro, chopped
                      • 2 tablespoons extra-virgin olive oil
                      • 3 tablespoons fresh lime juice
                      • 1/2 teaspoon ground cumin
                      • Salt & pepper to taste

                      Combine lettuce, beans, corn, avocado, onion and cilantro in a large bowl. Whisk together oil, lime juice, cumin, salt and pepper, and toss with salad. Stuff into tortillas and serve. This also is great with some extra homemade salsa on the side.
